Emerald Rice Recipe

Emerald Rice Recipe<br /><br />I used 3 cups of leftover rice and 1/2 cup at least chopped cilantro. I added 3 tbsp butter and liberal amounts of salt and pepper, used lemon instead of lime zest. Microwaved for about 5 minutes, stirred in 1/2 cup parmesan cheese and baked in the oven at 400 for about 15 minutes, then turned on the broiler for about 5 minutes. Before serving I drizzled with a little extra virgin olive oil. Why other reviewers have such a problem with this recipe is beyond me. My whole family absolutely loved it with broiled tilapia and sauteed broccoli we have leftovers and will definitely be eating it again. I dont care who made it or what they wear or it they are from Mars it is one of the best leftover rice dishes I have ever had and I will definitely be making it again. Even thought I have been happily married for 12 years, if I had a date tomorrow night, I would make it. Thank you Ingrid you go girl!<br /><br />I whole heartedly agree with the reviewers who suggest making and eating before reviewing. I too hope that Ingrid will delve more deeply into Latin cooking but she helself says that her show is with a Latin Twist. That said I found her rice dish wonderful. Sure you can make it more complicated but that is what a series is about. Anyone complain about Bobby Flay making grilling to simple. this dish goes very well with the Brandied Shrimp. I agree that it holds up very well and improves in flavor depth wih age. Dont diss it, Try it.
